A hydrophilic polysaccharide extracted from the seaweed plant Laminaria japonica. It is virtually odorless and tasteless. It is sensitive to moisture. It dissolves slowly in water to form a viscous colloidal solution. It is insoluble in ethanol, ether, chloroform, and acids with a pH below 3. The solution does not coagulate when heated.
Product Applications
1. Stabilizer. Thickener.
2. Artificial semipermeable membrane. Mordant.
3. Biochemical grade for immobilizing cells and enzymes; for example, immobilizing glutamate decarboxylase using sodium alginate.
4. Alginate matrices can be liquefied by adding chelating agents.
